Chinese Noodles Stir Fry
1 box of Chinese noodles (12 oz.)
Chicken breast (2)
Bok Choy or Chinese cabbage
Pea pods (1 cup)
Shrimp med. Size Cooked (3/4 cup)
Carrots (2)
Bean sprouts (2 cups)
Green onions (1 bunch)
Sesame oil
Oyster sauce 2-3 Tablespoons
Garlic minced (1 teaspoon)
Slice chicken into 1 inch strips. Pound with meat tenderizing mallet. Place chicken in bowl with 1/4 - 1/2 cup sesame oil. Coat chicken well, set aside.
Cook noodles as directed on box. Slice Bok Choy or cabbage in diagonal slices. Dice carrots, and green onions. I use about 3/4 of one bunch.
Heat wok on high and add 1 tablespoon sesame oil. Add garlic and stir for about 5 seconds, then add chicken. Cook for about 1 minute, add vegetables.
Stir fry until vegetables and meat are nearly done, and then add shrimp, drained noodles, and oyster sauce. Mix well, and cook for one more minute. Serves 5-6
