Baked Chicken - Indian style

Great idea to share recipes
Here's one of my favourites for a fairly dry Indian chicken dish that serves 4.
NOTE: you need at least 2 hours to marinate the chicken

Ingredients
Poppy Seeds (2 tablespoons)
Oil (3 tablespoons)
Medium onions, finely sliced (qty 2)
Natural Yoghurt (300ml)
Green Chillies (qty 3)
Garam Masala (1 teaspoon)
Salt (1 teaspoon)
Chicken breasts (qty 4)
Garnish
Coriander leaves

1 Roast the poppy seeds in a pan over a flame.
2 Grind the poppy seeds
3 Heat oil in frying pan.
4 Add onions to pan and cook until golden brown.
5 Add onions to bowl and mix with yoghurt, poppy seeds, chillies, garam masala and salt.
6 Blend in a liquidiser until smooth
7 Pour the yoghurt over the chicken breasts and leave to marinate (at least two hours - I leave overnight)
8 Lay a large piece of cooking foil over a baking tray
9 Place the marinated chicken pieces on the foil.
10 Cover with the marinade sauce
11Fold the foil over the top and seal the edges to create a sealed envelope.
12 Bake in an oven for 1 hour at gas mark 4 180C
13 Open the foil and continue cooking for another 15mins to dry up excess juices.
14 Serve on a bed of moist rice and garnish with the coriander.
